Frozen and canned fruit and veggie This blog entry is to ask opinions, rather than presenting some tips.. The area I live in (North Florida) is very poor in fresh fruit and vegetables, which are typically imported here from far away. Since they stay around for long time their taste is absolutely awful.. kinda like pieces of plastic. I have gotten used to frozen and canned vegetables and fruit (canned: i personally only eat unsweetened pineapple). However i'm puzzled about their nutritional values. I'm wondering if the facts reported on the boxes match the truth. Not sure those facts are really how food is after being frozen or canned, rather than before the process. * Are they a valid substitute of fresh fruit and veggies? * Plus, does blending them (e.g. after boiling, to make soups and cremes) make them lose part of their minerals and vitamins? It would be great if someone could share their knowledge or just give some opinions! :)

Carina Guess what everybody?!?!? Del Monte makes canned peaches, pears AND fruit cocktail in 100% juice now! Lately, I've been mixing fresh, frozen and canned fruits together for one big fruit salad. I can eat it all week! Hmmm, I think I'm going to create a new recipe now.......

drbg Hi Rossana,
As for vegetables, I have heard the same thing Ron did about the flash freezing thing. I eat a lot of frozen veggies and have no concerns. As for canned veggies, that is a different story because they add a lot of sodium. I would stick with frozen.
As for canned fruit, it might not taste as good as fresh but it is an OK alternative as long as they don't add sugar (why they need to add sugar at all is beyond me--fruit is already sweet enough)

Rossana haha yeah i will try to post something, adapting it for more common taste, since my personal preferences are quite weird.. plus even if i'm italian i'm so so bad at fine cooking! But i will try posting something simple soon :D

As to soups and cremes, i typically cook them in very simple ways, just take one or more veggie, boil them, add the spices that you like and blender (using the water in which they boiled) till they are like smoothies basically. Mixing them, for instance sweet peas, corn, green beans and carrots, results in very particular tastes.. i personally love it, its totally different from the taste of the whole veggie.

I do the same thing with beans, lentils and chickpeas, because in this way i find they are much easier to digest. I think it is because you break the molecules of fibers or something like that, i read this long time ago but do not remember well now (but i can guarantee it does work, at least for me) so this helps the job of the stomach.

Ron I, too, loved canned pineapple chunks. It's probably my favorite snack - though it might get overtaken if those mango chunks that I defrosted are as good ad when I'd cut one open.

Just make sure the canned stuff is in juice and not syrup or high fructose corn syrup or whatever.

As for canned/frozen...
I've read that, because of the process of flash-freezing, these are actually more fresh than the stuff you'd find in the produce dept. Basically, it goes right from the tree to being frozen to being canned or frozen (or both).

I use frozen fruit almost exclusively in my daily smoothies.

Blending/Cooking/boiling...I'd agree with MsFranklin.

MsFranklin I'd say, unless there's sugar added, you're fine with frozen fruits and veggies as substitutes. Blending them shouldn't do anything. Boiling, some say, can remove vitamins and minerals.
